
Breakfast Burritos

I started experimenting with easy and delicious breakfast meals that I could prepare on Sundays that would last us through the first few days of the week. Who doesn't love a good breakfast burrito? Well, my breakfast burritos were a huge hit with the hubby and has become one of his weekday favorites.
If I have time, I will make my homemade tortillas. That recipe can be found here. If not, store bought tortillas it is for him!
I started off by cooking up Canadian bacon and sautéing bell peppers and onions. Once the veggies were slightly tender, I added several eggs and egg whites and brought it to a scramble. I season with kosher salt and pepper but add the seasonings you prefer.
With everything cooked through I began the process of bringing it all together. In the pictures, I put the bacon down first but I have since chopped them and added them to the scramble for ease of eating the burritos on the go. Next came shredded cheese and the egg scramble. I haven’t perfected making round tortillas so rolling these suckers was a bit challenging. I used wax paper to wrap them but found regular tape wouldn’t stick. So, I used painters tape!! We had plenty to spare so I was able to wrap those bad boys up for a good seal to preserve flavor and freshness. Put them in the fridge and nuke them for about a minute when you’re ready to eat. Add my homemade salsa for added flavor and heat

When your grandma made these she would put them in the wax paper lunch bags they use to sell. I don’t think they do anymore. You may try wrapping them in plastic wrap.
