Breakfast sandwiches!

These are super easy and yummy!! So yummy I forgot to take a picture with cheese oozing out of it!!!

Again, I needed something quick, easy and delicious for breakfast for the hubby and me. So I decided to experiment with breakfast sandwiches. After a few trials I think I finally nailed it!
I used 9 eggs and maybe half a cup of egg whites, pepper, and Kosher salt. I whisked everything together and poured it in an 8x8 baking dish that was sprayed with nonstick spray. I baked in the oven, uncovered, for 17-24 minutes or until a toothpick came out clean at 350 degrees.
While the eggs baked, I quickly cooked the Canadian bacon over the stove to brown each side. I sliced English muffins in half and put a slice of cheddar cheese on each side and added a slice of bacon.
Once the eggs were cooked, I divided the them into ninths. I added the eggs to the sandwich and wrapped with foil and threw them in the fridge. When we were ready to nosh on something quick, I nuked it for 45 seconds, the cheese was melted enough and everything was warm, it was good to devour! If you have my broken down microwave with no handle, a minute burns the cheese, 30 seconds and the sandwich is too cold, 45 seconds seems to be the sweet spot with our microwave!
Hubby enjoyed eating these on the go or just before he had to go to work.

The microwave is still kicking, busted handle or not. It gets the job done. Are we having those for breakfast tomorrow?
